The choice of Ginjinha, a liqueur wine from the town of Óbidos, and the Brazilian sparkling wine Cave Geisse, a nationally recognized producer in Brazilian territory to open the WinePairing on the Plate, menu based on the influence of Portuguese viticulture on Brazilian viticulture



PREPARATION - WELCOME DRINK


The first step of the menu starts with the reception of the guests. And therefore it starts with a Welcome Drink!


During the preparation of the drink, the theme of the menu of the student's and the chef's choice is presented, as well as the justification for choosing this theme and the reason for the choice of beverages in the preparation of the drink.





Thus, the choice of sour cherry and sparkling wine is based mainly on the fact that they are two drinks that represent the history of Portugal and Brazil respectively.


Ginjinha is a liqueur wine made from sour cherry, a fruit similar to cherries that is typical of the town of Óbidos belonging to the Lisbon region (AFONSO, 2012).


The sparkling wine chosen by the student is of Brazilian origin, precisely because it is the most emblematic drink of Brazil, since we are known in the international market for the quality of sparkling wines we produce.


Through the theme winepaiting on the plate, the influence of Portuguese vitiviniculture on Brazilian vitiviniculture, the fusion of both drinks was intended to create the first cultural and sensorial experience for the dinner. From ginjinha (one of the oldest Portuguese drinks in the Portuguese country) and sparkling wine (which marks the emergence of the Brazilian market) in the world of wines.


The harmonization between the beverages of the welcome drink, with the addition of Sicilian lemon juice, will provide the client and guest with a contrasting harmonization based on the counterpoint between the sweetness of the ginjinha, as it is a fortified wine and with the presence of fruit in the bottle, in contrast to the acidity of the sparkling wine and also of the Sicilian lemon.



If you want to make it at home, here are the measurements below!


- 25 ml of sour cherry

- 90 ml of sparkling wine of your choice (ideally brut or extra brut because sour cherries, being a fortified wine are already sweet enough!)

- 8 to 10 ml of Sicilian lemon juice


Start with the sour cherry, lemon juice and finish with the sparkling wine!
