Winepairing on the dish: The Influence of Portuguese Vitiviniculture on Brazilian Vitiviniculture

Menu and Reaserch Full Description:


Research work (with more than 150 pages) with the goal of executing a 10-step menu through the optics and sensory experience of wine harmonization in the own recipe.


The research was based on the influence of Portuguese vitiviniculture in the Brazilian vitiviniculture from the history of the production and consumption of wine in the old world. The influence is given in particular from the coming of the Portuguese crown and court to Brazil (GOMES, 2007) and also from Italian immigrants (AMARANTE, 2018).


To this end, the present work and menu was constituted based on the choice of Portuguese and Brazilian wines. The results reveal that although Brazil is considered an emerging and new world country, in the consumption, elaboration and commercialization of wine, it could have, if it had not suffered prohibitions from Portugal in the elaboration and trade of wine, a greater reputation and trajectory than it currently has!
